Hey. Let me tell you about my favourite and quickest pancake recipe I’ve been using since forever. To be fair I don’t use exact measurements of ingredients cuz I literally just mix it by random now to create ideal consistency.
I know american definition of pancakes are this thick circle shaped pancakes with butter and maple sirup but that’s not what we in Slovakia call pancake. I would say the proper translation of our pancakes would be crepes – thin pastry with different (usually sweet) toppings.

How I created this beauty:

What I used for the pastry (just approximately I  did not measure all of those)

  • Milk – 400ml or for my foreign readers 13.5 ounces
  • Oil – sunflower oil –  just like a half of a cup
  • Eggs – I used two whole eggs
  • Flour – 200g or like 2 full cups
  • Sugar – just however much you please – recommending one cup

Recipe:

Mix it all. That’s it. In whatever order you like – I  usually do dry ingredients first and then add liquid ones. Mix it and add more of anything you feel like it’s needed to create creamy thick consistency.
Pre-heat the frying pan and add just a little bit of vegetable oil. Pour one full scoop of the dough to the pan and spread it evenly. One ladle = one pancake. Cook for couple minutes until it’s beautifully golden and then flip to the other site. That’s all folks.

For topping I used:

  • stracciatella ice cream
  • nutella
  • fresh strawberries
  • bananas

You can go wild with topping options – my favourites besides the one above are: jam, cream, mascarpone, berries, caned tangerines, cream cheese….
Also if you’re not a fan of sweet food try the salty version of this pancake by simply adding mayo, ham, cheese, vegetable… it’s delicious.
Another great tip – add vanilla, cinnamon or other seasoning to your dough to make it special.
It’s quick, easy and you can really let your creativity and cravings loose.
